Angel's AG-2 distiller's yeast is best suited for the fermentation of corn, barley and other grains.
Importantly for distillers, the yeast cells tend not to give adverse effects when boiled. This means the wash does not need to be clear going into the still.
In our experience, AG-2 has a more neutral flavor profile compared to Angel M-1. This allows the grain characteristics to be the star of the show. In our opinion, it works well for a more traditional style of bourbon.
