Flaked barley has been pre-gelitanised so it is ready to mash. But contains little to no enzymes. You will need to use this in conjunction with a base malt or bottle enzymes.
Irish whiskey famously uses unmalted barley to give a more cerial-like flavor and also a smooth buttery mouth feel. This combination is sometimes described as shortbread-like.
