Rye can be used in smaller percentages to add complexity of flavour and aroma to distilled spirits. Or used in march larger percentages for high rye whiskeys.
To our taste Rye tends to lend dakr fruit and cooking spice flavours to distilled spirits.
Caution, rye dose not have a hull so can make traditional methods of mashing tricky. It also has high beta glucan levels that can make the wash very viscouse and slimey. You can combat this with Beta Glucanase enzymes.
