Wormwood is the fabled defining botanical in absinthe. Many modern absinthe are much more anise-forward, but absinthe just isn't an absinthe without wormwood.
Wormwood is one of the most bitter botanicals. When macerated it forms a VERY bitter tincture. Distillation softens this aspect significantly.
Also used as the bittering agent in Vermouth.
