Angel Leaven (yellow label) yeast will change the way you look at fermentable ingredients.
Angel yellow label allows you to ferment starch/carbohydrate-based fermentable WITHOUT the need for gelatinization or mashing.
Simply add the starch source to water (preferably hot), and cool to 24-36c. Add in the yellow label yeast and let it ferment!
We have seen some evidence that it may be worth letting washes fermented with yellow label clear out before distillation. Doing so seems to reduce the wine/sake-like flavor it imparts. But that is a stylistic choice you must make yourself.
Fermentation Temp: 24c - 36c
